What’s next? Believe it or not, it's a neck-and-neck race between sour cream and ricotta cheese. No matter which comes out on top, these two unlikely ice cream ingredients are sure to please.
While we’re sure it’s far from the first time someone has whipped this up, we were first introduced to the magic that is ricotta ice cream thanks to TODAY show co-host Hoda Kotb. The podcast host, author, and journalist stepped up to the blender during a segment of the morning show Hoda & Jenna to demonstrate a healthy-ish treat she makes for her two daughters, Haley and Hope.
“This is my lighter alternative to ice cream I've been making with Hope to accommodate her recent dietary changes,” Kotb says on the TODAY website. “The ricotta provides the creamy texture, while the sugar-free maple syrup lightly sweetens it up. Add sprinkles or your favorite topping before serving.”
Earning a nearly full five-star rating from 89 reviews, fans seem to agree with Kotb and her girls. To make ricotta ice cream of your own, you will need:
Combine it all in a blender pitcher and blend to reach your desired consistency. Blend on high speed until creamy and evenly combined, or for about 1 minute.
Garnish as desired with berries, chocolate chips, hot fudge, caramel sauce, sprinkles, nuts, whipped cream, and (of course) a cherry, then sip or spoon like a milkshake.
